Hi all. It's a no-fic day! Not that I'm happy about that. I will, however, have a chapter of Inevitable to you by next Sunday, as well as whatever ficlettes strike during this, the busiest week of the year.

Why is it busy? I'm glad you asked! See, I'm drafting up a present for someone, and I'm seeking vegetable recipes. They don't have to be vegetarian, but as long as there are vegetables in some form in the dish, I would love to see it.

So, flist, if you've got an awesome vegetable recipe (no matter the flavour or vegetable at hand), send them my way! I would be ever so happy about that.

(Or if you know of an awesome recipie on-line, URL me)

D'you have any particular vegetables in mind? Are there any you already have a glut of recipes for and we should avoid giving you more of (unless they're really good)?

And does rice count as a vegetable? Tofu?

Oh, I know they're not vegetables. But I have recipes with them :) (Spanish rice pudding, and a tasty tofu dish from C. Dragonwagon).

Hm. I can't find my recipe for a delicious Jerusalem Artichoke and Mushroom Soup yet, so here's a simple Beetroot and Parmesan Spread, instead:

200g beetroot, steamed, peeled and roughly chopped
100g parmesan cheese, roughly grated
1 tablespoon peanut oil (or any mild oil)
2 tablespoons red wine vinegar

Put the cooked beets and the oil into a food processor, buzz till basically smooth. Then add the parmesan and the vinegar, buzz till smooth. Voila.

You can have it on Turkish bread, or mix it with plain yoghurt to produce a creamier dip.

(I'll post a slightly expanded version of this recipe on my lj later - I had fun in the kitchen today!)

This is not a recipe as much as a suggestion... During winter we use a lot of swede/rutabaga in Norway. In England they consider this mostly animal food, and I don't know if you eat it much in Canada, but it really is very good!

We usually boil it and make a mash out of it like with potatoes (with cream and such), and eat it with lamb of some kind. It works well as a vegetarian dish too, and it can also be eaten raw.

And mashed potatoes with mashed sellery mixed together is really good too! :~) It's typical winter food, though.

We also mash rutabagas here. My mom's family is Ukranian, and we have these for dinner sometimes. Not mashed, however. Thanks for the recipie.

lasagna

This is my favourite veggie lasagna recipe.

200 grams (about 3) carrots
50 g celery
100 g leek
1 red bell pepper
2 tbsp butter
2 tbsp wheat flour
2 desilitres cream
4 dl water
1 stock cube
2 dl grated cheese
1/2 tsp salt
1/2 tsp black pepper
1 tsp oregano
200 grams lasagne

Fibely chop all the veggies.
Lightly fry carrots, celery, bell pepper and leek in butter for a few minutes.
Add flour, then water and stock cube. Let it boil.
Add cream, most of the cheese and spices. Let it heat and boil for a few minutes while stirring it at the same time.
Grease a baking dish. Cover it with a thin layer of the sauce, then lasagne, sauce, lasagna - until all the sauce is gone and the last layer on the top is sauce. Add the rest of the cheese to the top. Bake in 200 degrees for about 30 minutes.
Take the dish from the oven and let it be for 10-15 minutes so it sets.

Translated this from my native tongue so it might sound a bit funny - but tastes excellent! Even my meat eating friends love this lasagna!

I'm afraid I'm not sure what a desilitre is. What fraction of a litre is it? (0.2 L, 0.02 L?)

i have a ton at home in a binder but my favorite is a side dish i got off of food network at

i adjusted it with 3-4 crushed garlic cloved and one or two big peels of lemon zest for a little more zing but its great as is as well.
